Out of sorts

and I do know why... I'm very out of sorts because I'm missing Mom.
I wish she was still here.
I wish I could call her up on the phone and hear her voice
I wish just once more I could see her face
or touch my Mom's hand....

Want to stay home today, but I do have class tonight.
Can't miss it unfortunately.  I would like to run away I think...
Just escape for a bit.
Not going to happen, and it's not that I want to escape from my reality
I just would like to have a vacation from emotion.

Who are you?  For those of you who saw the video of me speaking last weekend, this is going to be a bit of a repeat. Yes, I did it, I actually stood up in front of a crowd and spoke. Nursing School Break...

and I am loving it.  Doing decent on my daily bible reading, not perfect but consistent. Deep cleaned the living room today, all those nooks and crannies and dusting no one else bothers to do.  Decorated the outside railing in front of the house, set up an online calender thing. Now for the crazy, insane part.... I have decided to register for the Hospital Hill Half Marathon in Kansas City in June.  Ever since I had my surgery I have wanted to start running and ultimately run a marathon.  Started training for a 5k about a week before nursing school started.  That was a mistake, no time to set a routine before my schedule went crazy.... Decided since I have the next 6 weeks off school (well nursing school anyway) I have time to establish a habit of running... Tied my shoes on today... and while it was a pathetic run for anyone who runs I'm proud of myself anyway.  Went out for about 15 min total with 30/30 intervals as my plan.  I made it for a...

Homemade Chicken Patties and Squash Fries

Let me say I apologize for the lack of pics in this weeks blog posts.  My camera is in Nebraska with my oldest so I have no photos of the food I'm cooking this week.  Last night for dinner I tried a recipe I copied from the internet ages ago to try (no clue now what website or I would give credit).  Homemade Chicken Patties..  My girls love chicken patties but I wanted to give them something a little healthier than the processed meat things at the store.  For a side I made the Hungry Girl's Squash Fries.  Both girls were thrilled and so was I, fast food at home :) Homemade Chicken Patties  1/4 cup chopped onion 1/4 cup chopped celery 6 tablespoons butter (divided in half) 3 tablespoons flour 1 1/3 cup milk (divided) 2 tablespoons parsley 1 tablespoon seasoning salt 2 cups finely chopped cooked chicken (planned leftovers from another day maybe) 1 cup fiber one crumbs (great breading and adds lots of fiber) or bread crumbs ...
