Encrusting
Crystallized
Frozen in a moment
unable to move
sparkling prisms
covering every surface
making the ugly
new and pretty
Hiding the surfaces
sharp angles and all
Beauty covers and hides
Freezing, falling
crystals of light.

Finding My Voice.... and my story

Who are you?  For those of you who saw the video of me speaking last weekend, this is going to be a bit of a repeat. Yes, I did it, I actually stood up in front of a crowd and spoke. My good friends will know how rare that is for me, because I have a fear of public speaking :)  A friend of ours, named Kristin has a great foundation to support military wives. To see what she's all about check out her website  Northwest Military Wives Last weekend, they had a foundraiser to raise money for a retreat for military wives. They decided to honor me at the event and she asked me to speak.  Now, when she first invited me to speak I thought, no big deal I can talk about  Jimmy's Walk . I thought his cross-country walk to raise awareness for Veterans Mental Health issues was why she asked me to speak. I thought,sure I can talk about him. Nursing School Break...

and I am loving it.  Doing decent on my daily bible reading, not perfect but consistent. Deep cleaned the living room today, all those nooks and crannies and dusting no one else bothers to do.  Decorated the outside railing in front of the house, set up an online calender thing. Now for the crazy, insane part.... I have decided to register for the Hospital Hill Half Marathon in Kansas City in June.  Ever since I had my surgery I have wanted to start running and ultimately run a marathon.  Started training for a 5k about a week before nursing school started.  That was a mistake, no time to set a routine before my schedule went crazy.... Decided since I have the next 6 weeks off school (well nursing school anyway) I have time to establish a habit of running... Tied my shoes on today... and while it was a pathetic run for anyone who runs I'm proud of myself anyway.  Went out for about 15 min total with 30/30 intervals as my plan.  I made it for about 10 min at 30/30 intervals

Homemade Chicken Patties and Squash Fries

First of all... Let me say I apologize for the lack of pics in this weeks blog posts.  My camera is in Nebraska with my oldest so I have no photos of the food I'm cooking this week.  Last night for dinner I tried a recipe I copied from the internet ages ago to try (no clue now what website or I would give credit).  Homemade Chicken Patties..  My girls love chicken patties but I wanted to give them something a little healthier than the processed meat things at the store.  For a side I made the Hungry Girl's Squash Fries.  Both girls were thrilled and so was I, fast food at home :) Homemade Chicken Patties  1/4 cup chopped onion 1/4 cup chopped celery 6 tablespoons butter (divided in half) 3 tablespoons flour 1 1/3 cup milk (divided) 2 tablespoons parsley 1 tablespoon seasoning salt 2 cups finely chopped cooked chicken (planned leftovers from another day maybe) 1 cup fiber one crumbs (great breading and adds lots of fiber) or bread crumbs   In a large saucepan,
