No spin class today

had a minor bout of food poisoning or something last night so I decided not to go.  Ended up being a good thing because schools were canceled due to icy roads (sounds like it's icing again right now).

Have some weird but good I think stuff going on right now, but not ready to blog about it.  Too public :)

Girls are doing well and we are baking Christmas cookies.  Talked to two of my four brothers today which is always nice.  Now if I can just manage to get all my Christmas sewing done with the girls around will be interesting.

Well my girls love Pasta... they would eat it every night of the week if I would let them (which of course I won't).  We have been experimenting with gluten free pasta and so far we have been pleased.  That being said, tonight we just used normal pasta.  I forgot to pick up the gluten free pasta at Woodman's and didn't feel like going there after my dental work today so I just picked up a box of fettucini at Target.  I found the basic recipe on another blog and imported it to Plan to eat.  If you have plan to eat here is the link http://www.plantoeat.com/recipes/1431713 For those of you who don't (and this includes me because I'm still on my free trial and I'm not sure if I'm going to keep it or not).  The basic recipe is from abearinthekitchen.blogspot.com This is a Cajun Chicken Fettuccine Alfredo and of course I modified her recipe a bit to our tastes. Finding My Voice.... and my story

Who are you?  For those of you who saw the video of me speaking last weekend, this is going to be a bit of a repeat. Yes, I did it, I actually stood up in front of a crowd and spoke. My good friends will know how rare that is for me, because I have a fear of public speaking :)  A friend of ours, named Kristin has a great foundation to support military wives. To see what she's all about check out her website  Northwest Military Wives Last weekend, they had a foundraiser to raise money for a retreat for military wives. They decided to honor me at the event and she asked me to speak.  Now, when she first invited me to speak I thought, no big deal I can talk about  Jimmy's Walk . I thought his cross-country walk to raise awareness for Veterans Mental Health issues was why she asked me to speak. I thought,sure I can talk about him. Homemade Chicken Patties and Squash Fries

First of all... Let me say I apologize for the lack of pics in this weeks blog posts.  My camera is in Nebraska with my oldest so I have no photos of the food I'm cooking this week.  Last night for dinner I tried a recipe I copied from the internet ages ago to try (no clue now what website or I would give credit).  Homemade Chicken Patties..  My girls love chicken patties but I wanted to give them something a little healthier than the processed meat things at the store.  For a side I made the Hungry Girl's Squash Fries.  Both girls were thrilled and so was I, fast food at home :) Homemade Chicken Patties  1/4 cup chopped onion 1/4 cup chopped celery 6 tablespoons butter (divided in half) 3 tablespoons flour 1 1/3 cup milk (divided) 2 tablespoons parsley 1 tablespoon seasoning salt 2 cups finely chopped cooked chicken (planned leftovers from another day maybe) 1 cup fiber one crumbs (great breading and adds lots of fiber) or bread crumbs ...
